Roughly chop the plums, Discard any mouldy part
Use the seeds as well
Add Boiling Hot Water over the plums
Cover and keep aside for 24 Hours
Add 1.5 cups Sugar
Now add 1 tbsp Yeast
Transfer the mixture in a clean steralized jar
The jar should not be fully airtight otherwise it may blast if you don't open it regularly
Add 1 cup of Sugar to feed the Yeast

We need Japanese green plums, rock sugar, and white liquor or Shochu.
Pour boiling water in the container to sanitize
Rinse or wipe the container with Shochu (liquor)
Wash plums and dry well
Layer plums and rock sugar alternatately in the container
Pour Shochu
Seal and store in a cool dark place (not in a fridge)
Gently move the container every now and then
Serve chilled, over ice, or mix with soda water
