bring a large pan of salted water to the boil
once dark green, drain the spinach
put the drained spinach into ice water to stop it cooking
squeeze the water out of the spinach and transfer to a clean tea towel
wrap up and squeeze to drain off any more liquid
set a steamer into a pan with a little boiling water at the base
make sure the water doesn't come up above the bottom of the steamer
put the lid on and steam for 3-4 mins until wilted
season with salt
stir frequently as the spinach wilts
