The Cortado is Spanish in origin and is traditionally only offered in one size, equal parts espresso and steamed milk.
Pull a double shot of espresso
You must use a 12 oz or smaller steaming pitcher to properly steam the milk otherwise the liquid depth will be too shallow.
You will need to steam 4 - 6oz of milk even though we will only be using 2 oz of milk for the beverage.
Always use a thermometer when steaming milk.
Add espresso to serving cup.
Groom your milk. Lightly tag on counter and give it a swirl.
Add 2 oz of steamed milk to the espresso
Final beverage will be 4 total ounces.
If serving in a to-yo cup, use the 8 oz size but leave an inch of room.
