Ingredients: daikon, atsuage, shio koji, soy sauce, mirin
Peel daikon(1/3) and cut into bite size pieces.
Cut atsuage(1 package about 150g) into bite size pieces.
Add mirin, soy sauce and shio koji(1 Tbsp for each).
Cover and simmer for 10-13 minutes over medium heat.
Open the lid, turn over and boil down for 2-3 minutes.
