In a bowl, add flour and melted ghee
Add water gradualy & knead unti a smooth yet firmn dough is obtained
Divide the dough into 6 equal parts
Coat the sheet with the prepared mixture & place another sheet on top
Drizzle a bit of flour on the working surface & on top of the sheet
Rol the sheets together until a large flat circular disk is obtained
Cut into equal parts (8 to 10 pieces depending on the size of the log)
Heat enough oil in a deep fry pan and fry in batches
In a saucepan, add sugar, water and cardamoms
Blend sugar and cardamom pods

Add ghee/clarified butter (rtp) to the plain flour & mix to incorporate the ghee well with the flour
After 10 mins, divide the dough into 3 portions
The other 2/3 portion of the ghee-flour paste will be spread on the other 2 rolled out dough
Cut out & discard the edges (or you can roll the cut out dough edges & fry but you will not get khaja shape)
Khajas are ready to be fried!
While the lehajas are little hot, sprinkle the powdered sugar onto them
Take out khajas & place on tissue paper to catch any excess oil
Sugar syrup is forming thin one thread
Juicy and crispy Khajas!!
