How to Prepare Shrimp for Tempura
Use tiger shrimp, size 16-20 or more
Remove the shell of the shrimp, but keep the tail
Place the shrimp belly side down on your cutting board
Make a shallow insertion along the back of the shrimp
Turn the shrimp around and remove the whitish vein as well
Make 4 to 5 crosswise shallow insertions
Turn the shrimp back in its belly and gently press it down
Cut off the tip of the shrimp's tail
